Grape variety: Chardonnay blend
Surface: 4,5 ha
Yield: 25 - 30 hl/ha

Vinification: "à la bourguignonne": grapes are pressed upon arrival at the winery. The wine then goes through alcoholic and malolactic fermentations in two to three-year-old Dujac oak, with regular bâtonnages" (stirring of the lees).
Élevage: Ten months in Dujac oak.
Tasting notes: Pale coloured and bright, the Auréliens blanc offers a bouquet of apple, pears and citrus. Freshness and fruit are associated on the palate with a creamy ttexture followed by a crisp dry finish.

Grape variety: Cabernet Sauvignon and Syrah
Yield: 45 hl/ha
Colour: Red
Vinification: 30-to-35-day-long fermentation on natural yeasts in tanks to help tannins polymerize, making them smoother. Regular remontages and even délestages (wine is run out of the tank into another, and then pumped over the cap of grape skins) ensure the wine enough aeration.
Élevage: Twelve month in old Dujac oak. Blended in tanks and bottled unfiltered after unfined.
Tasting notes: A bland of Cabernet Sauvignon and Syrah, this is a robust wine with plenty of red fruits character and a toasty finish. This is an excellent food wine. It will pair particularly well with Méditerranean food.

Vinification: 30-to-35-day-long fermentation on natural yeasts in tanks to help tannins polymerize, making them smoother. Regular remontages and even délestages (wine is run out of the tank into another, and then pumped over the cap of grape skins) ensure enough aeration to the wine.
Élevage: 12 months in old Dujac oak. Blended in tanks and bottled unfiltered after a light fining.
Tasting notes: The Merlot greets you with a nose with cherry, blackcurrant and liquorice. On the palate, it is well structured, fresh, bright and with overtones of cacao and tobacco. We recommend decanting this wine before serving.

Grape variety: Blend of Cinsault, Syrah, Merlot
Colour: Rosé
Please note: Demand for our Rosé has grown every year to the point that we can no longer meet demand with our own grapes. This has led us to create Maison Triennes to search and purchase the best grapes available grown in our area. For the sake of clarity we are calling the new wine “Rosé” rather than Gris. The style of the wine remains is unchanged. The 2006 is now on sale, and we are sure you will enjoy it!
Vinification: The Rosé is made The wine is produced from the free-run juice, after a two to three hour skin maceration and slow fermentation (up to a month) in temperature-controlled stainless steel vats. Early bottling helps retain freshness.
Tasting notes: This blush wine is made from grapes pressed following only a very brief period of skin contact. It results in a rosé of a very light pink color. An aromatic nose of red fruits and candy is followed by a round, harmonious and seamless palate. This wine will seduce you by its freshness and elegance.

Grape variety: Blend of the best casks of Cabernet Sauvignon, Syrah and Merlot

Tasting notes: Triennes' flagship red wine is a blend of Syrah, Cabernet Sauvigon and Merlot. A dark, dense wine with purple hues, it shows spicy aromas combined with ripe fresh fruit. The palate is rich and full of life with plenty of structure. This is a wine that needs some air to truly open up and show its best.

Grape variety: Viognier
Surface: Acreage in production 13.50 ha, shared between 25 to 30 year old vines and 4 to 6 year old new plantations.
Yield: 28 to 35 hl/ha depending on the plot of vines.
Colour: White
Vinification: Ferments in temperature-controlled tanks. Some of the wine undergoes malolactic fermentation, while the rest is blocked at an earlier stage to retain its freshness. The lots are subsequently blended.
Élevage: 100% in steel tanks.
Tasting notes: Sainte Fleur is explosive on the nose with apricot, honeysuckle and honey aromas. It has great power and intensity, combined with a beautiful balance between richness, acidity and minerality
